Linda's Broccoli Lemon Chicken
Lemon Broccoli Chicken
Ingredients
Chicken, skinless, boneless 1 Lb (4 half breasts)
Lemon 1 Each
Cream of Broccoli Soup 1 Can (small)
Milk ¼ Cup
Onion (chopped) ½ Medium
Mushroom (sliced) 4 oz
Vegetable Oil 1 Tbsp
Black Pepper (ground) 2 tsp
Preparation
• Cut 4 slices of the lemon, set aside
• Juice the rest of the lemon. Reserve
• Chop the onion, set aside
• Slice the mushrooms, set aside
• Place the vegetable oil in a skillet on medium high heat
• Cook the chicken breasts until browned on both sides
• Place the chicken on a plate and set aside
• In the same skillet, combine the mushrooms and onions
• Sautee’ for 2 minutes
• Add the soup to the skillet. Stir
• Add the milk to the skillet. Stir
• Add the lemon juice. Stir
• Place the chicken in the mixture
• Put the lemon slices on top of the chicken
• Reduce the heat to Low
• Cover the skillet
• Cook for 20-30 minutes
Serve with rice.
