Food, Wine & Just Good Living With SaucyJoe

It started with a love of food, wine & fun and blossomed into a maddening pursuit of the best recipes, techniques, grills, smokers, wines, crafted beers, rubs, marinades and sauces... We do more than play with our meat though -- we review and discuss all things cooking, drinking, reading, laughing and living at SaucyJoe's.

Super Bowl Sunday Treats!

There are two recipes I'm FAMOUS for making and they are perfect for having while you wait for the commercials during the Superbowl. They're really easy and all the items are pretty easy to find (don't wait until Sunday to purchase all your items, though) so I thought I'd share my recipes for my Super Bowl of Queso and Margaritas Especial. (Disclaimer: Don't look for much health value in these recipes.)

Cathy's Super Bowl of Queso
2 pound block of Velveeta
1 pound of Jimmy Dean's spicy sausage
1 pound of ground beef
1 can (10 oz.?) of Rotel Diced Tomatoes and Chilies (I use the "Original")
1 can (10 oz.) Campbells Golden Mushroom soup (you can substitute the chicken enchilada soup if you can't find the golden mushroom - regular cream of mushroom won't work here)

Brown the sausage & beef together and drain off excess fat. Dice Velveeta (makes it easier to melt) and melt in a crock pot or medium to large pot. Add meat mixture, Rotel and soup. Let blend together and enjoy with tortilla chips or bread!

Margaritas Especial
1 small can of Minute Maid Lime-ade (don't use a generic or store brand)
Tequila Blanca
Orange Liquor (brand/type depends on your taste and budget)
Ice

In a blender, blend ice, lime-ade, 1 can of Tequila and 3/4 can of liquor (use can from lime-ade). Pour into salted glass (unless you prefer to drink it straight from the blender) and enjoy!

Make sure you keep a designated drinker and designated driver assigned. You'll need the latter if you are the former.

Any chance you'd consider making your famous queso for Miller Margarita Night on the 23rd? 'Twould be most awesome.
All this 'spreading the good life' is going to cause a little spread in my girth! More Jazzercise, and a 5, 6, 7, 8!

I need to take some vacation time soon and make a Miller Margarita night. That is if you'll let me come and play! Don't know if boys are allowed. Just tell 'em I'm the caterer. I'll cook up something and keep the drinks flowing.
